potatoes
Greek yogurt
red pepper flakes
fresh thyme
sea salt & cracked black pepper
olive oil
scallions, chopped
- Boil potatoes until fork tender.
- Smash with back of knife.
- Drizzle potatoes with olive oil, sprinkle with salt & pepper, and broil until brown and crispy.
- Top with Greek yogurt, thyme, pepper, and whatever else tickles your fancy. Crispy bacon would be good. Cheese too. You know, all those unhealthy yet oh-so delicious things.
