enjoyable eggplant


eggplant
sea salt
cracked black pepper
dried parmesan cheese
red pepper flakes
balsamic vinegar
olive oil

- Cube eggplant (slice, dice, whichever you prefer). Toss with olive oil, salt, and pepper. Bake at 350 degrees for about forty minutes. 
- Toss with parmesan cheese, pepper flakes, and drizzle with balsamic vinegar. Serve warm.
